Adventures in Cooking // Chimichangas

Do not be afraid. Chimichangas are just fried burritos!

What you'll need:
Meat and/or beans
Cheese
Lettuce, tomato...
Essentially, whatever you like to put in your burritos

Heat a skillet full of vegetable/canola oil (for frying).
Cook your meat and/or beans.
Make your burrito.
Wrap it as cleanly as possible! Remember, you'll be dumping it in oil.
Fry in hot oil until golden brown. Then, flip and fry the other side until golden brown.
Eat.

I've made these a few times since, and we decided to just brush them with oil and then broil them this last time. MUCH BETTER, if fried food is not for you. Still crispy and warm, but much less oil. I'd definitely recommend doing that instead.
I thought these would be difficult, but they were really easy to make. Just be sure there are no holes in the burritos! John's got a little drenched in oil, which is gross. Otherwise, they were delicious. Just like Tijuana Flats! Kinda ;)
